Frida Lega is a Technical Sales Manager who is passionate about every aspect of the food industry. For the last two decades, she has overseen the development of bulk-handling installations across all F&B sectors the world over, acquiring a rich knowledge of technologies and materials across a wide range of markets.

Frida Lega will share her experience in providing a wide range of international bakery manufacturers with customized fermentation solutions, with a special eye to sourdough fermentation, its history and its benefits. Rye, wheat and multigrain breads but also pizza, focacce, brioches and crackers: in the last two decades, a key factor in bakery manufacture has been the rediscovery of sourdough, and the development of technologies that make artisan quality possible on an industrial level.
